The crisp-leafed lettuce cultivar known as "iceberg" grows in a cabbage-like, spherical head. As you get closer to the center of the head, which has the sweetest leaves, the leaves change from pale yellow to virtually whitish. The leaves on the exterior of the head tend to be green.
